Environmental coffee is the understanding that coffee is never experienced through taste alone. The cup exists within a canopy of place, temperature, light, architecture, sound, weather, nature, language, art, and human presence. The fragrance of a freshly roasted Ethiopian coffee changes when it meets the open air, the warmth of the sun, the movement of Main Street, and the conversation of the people gathered around it.
